Everyday Baking . Recipes . Rustic Plum Tart | Everyday Food | PBS

I couldn't find any plums at the store, so I substituted 1 16 oz package frozen peaches and 1/2 16 oz package frozen strawberries. This ended up making too much filling, so I baked some filling by itself, which was very tasty.

Mine doesn't look as pretty as the Martha Stewart picture, but it was delicious.

so i made brownies from the box with homemade icing last night while being totally bored out of my mind...they were yumm!

then tonight i made a tiramisu bowl which is really easy to make...we had some freinds of my dad come over and they told us only a couple of hours before that they were in town, so my mom didnt have time to come up with some desi sweetdish and cool it down before they come as well as make pulao and kababs and stuff...so i got all the ingredients and whipped this up, it turned out pretty good for a first time! i hadnt tasted it until after they all ate it but i was really nervous how it would turn out like....it was gone within a couple of minutes of being taken out. :) alhumdulilah! (my brother saved me some though.... it came out pretty good!) although i think i need to work on the whipped cream topping part, i put it in the freezer bag before it thawed out completely so it came out all clumpy instead of the smooth spirals i had wanted...oh well, ill try again inshallah!

for my second venture into the realm of baking-things-from-scratch, i made sugar cookies.

we didn't have eggs in the house, so i found an egg-free recipe. they would have been awesome, except... my mom (who's notorious for winging recipes) happened to be around. i didn't ask for her help, but she added the baking soda when i wasn't looking... and threw in a lot more than the recipe called for. they tasted so good, until the chalky baking-soda aftertaste

trust me, i know all about that. i grew up eating my mom's out-of-a-box brownies that would have served better as doorstops.
baking is not for health nuts who think applesauce is a good substitute for butter, and who try to add salted pistachios into the mix for yellow cake. (i swear, she did that once)

It's not?
But applesauce is yum and butter is not.

This is why I don't bake.
Well, you know, other than I don't know how to and I can't be bothered 'cause it's time-consuming and a lot of work (you can buy all the tasty treats you want? :lol: ).

But as it is, I buy a cookie/brownie once in a while if I'm craving some chocolate or whatever. If anybody at my house baked regularly, I'd be superfat.

baking at my mom's is the hardest thing. nothing turns out right because i have to half-ass the ingredients. my mom had turned allllllll the butter into ghee, and i was making cookies that called for a lot of butter. ghee cookies are not yummy.. :lol:

I got the recipe from Neiman Marcus and made their infamous chocolate chip cookies from scratch. I didn't have espresso so I used instant coffee instead. I do have one problem when I'm baking cookies and thats keeping them soft a day after i've made them. Their soft the first day but then they tend to get a bit hard the next....how do I prevent that?

you have to put them in an airtight container. if you also throw in a slice of bread, it helps.

i think the cookies pull the moisture from the bread to stay soft. and the bread turns really hard. ive never tried it myself, tupperware is usually sufficient.

had a dessert craving but wanted to keep it healthier... so i made strawberry shortcakes. i didnt add extra sugar to the strawberries, and didnt add any ice cream/cool whip or anything. so basically, it was a biscuit and some strawberries. :idea:

~ 150 calories, and very filling. :p

I have Sugarberry's recipe for German Apple Cake in the oven now. My FAVORITE cake, EVER.

I'm so excited. :o Thankfully I'm at my parents house, so they will eat most of the cake before I have the chance to devour it myself. :faint:

has anyone used vanilla bean instead of extract? we add it to our espresso but the imitation stuff tastes like crap and the good stuff is haram. My husband read somewhere you can grind dried vanilla beans and add them to your coffee. We shall try once they get here. I wonder if you can use the powder in baking too.

I used to bake with vanilla beans, but it got too expensive. The cookies I made with them were :fasttalk:

A few thoughts:

Do you put sugar in your coffee? If so, use a vanilla bean for baking (scrape out the seeds and let them sit in the shortening used in the recipe for awhile before mixing everything together), and then chop up the skin and stick it in a container with sugar. After a few days, you'll have vanilla sugar.

Frontier Coop makes an alcohol free vanilla flavor that has just a slight aftertaste with uncooked foods, but otherwise tastes quite good in beverages. In cooking, it's :faint:
