Because ending the family name in his children is shameful. If he was sterile or the kids died or having sons wasnt in Allahs plan for him, thats one thing. Doing it by choice is something else. It means the guy doesnt value the name and the heritage it represents. Understand that we are supposed to carry paternal names that go back many generations.

A guy who would toss away their heritage like that to make a woman happy is shameful

its pretty self explanatory, sis. We are supposed to know our heritage and our names are a big part of that. Second point is that shame is a socially defined phenomenon and all of our cultures would definitely consider it shameful to do what this guy did. Even westerners, who dont value family heritage and ties as much we do would consider shameful to do something like that (in many cases)

But we live in a diverse world where people are free to throw away the traditions of their cultures. If there are muslim guys out there who would degrade their family in the way you described, then i'm sure there are muslim girls out there who want them to do so. Heck, a girl could probably find desperate shameless guys out there who would change their own name to their wife's family name if she looked hard enough. Everybody's free to do whatever they want.

Yeah, my question was about whether or not there's an Islamic basis for the idea that kids should all have their fathers' names.

Part of maintaining family ties is having family names and kids get the family name of the father (unless you live in a matriarchal society).
Changing your kids or your husbands family name attributes paternity where it isn't.

Not really. It's changing the naming practice to not attribute paternity at all.
