Curious,
is insulting the Prophet(S), eternal hell fire?, we had a situation in my community where someone("Muslim") openly insulted the Prophet(multiple witnesses)
but claimed he was joking when he was pressed for answers.

He committed kufr.
Al-Qadhi ‘Ayadh al-Maliki says,
“Whoever utters a word without intending to insult the Prophet SAW, and without believing in what he said, such as cursing him, insulting him, rejecting him, or attributing something inappropriate to him, or denying something he is deserving of, the denial of which necessitates attributing deficiency to the Prophet SAW, for example to claim that he is guilty of a major sin, or that he compromised in proclamation of the message or in judging amongst people, or to lower his status, the nobility of his lineage, or his copious knowledge, or his asceticism, or if he denies what has been famously conveyed by him, the knowledge of which has become widespread, with the intention of denying the Prophet’s report, or if he utters something stupid or a kind of insult towards him, even if it is apparent from his condition that he did not deliberately condemn the Prophet and did not intend to insult him, either due to his ignorance which pushed him to utter this, or due to his annoyance or drunkenness that led him to say this, or lack of control over his tongue, then the ruling on him is that he be killed without any hesitation; since no one is excused in matters of kufr for ignorance or a slip of the tongue, or any of the aforementioned, so long as his mind was in control of his self, except the one who is coerced whilst his heart remains at ease with Iman. In accordance with this the scholars of Andalus passed a verdict against the one who denied the asceticism of the Prophet SAW” al-Shifa with the Sharh of Mulla ‘Ali al-Qari 2/438
Ibn Hajar al-Haytami says commenting on al-Qadhi ‘Ayadh’s statement:
“What he mentioned is quite apparently in agreement with the principles of our madhab, since the axis of imputing someone with kufr is what a person apparently says. What he may have meant or intended is given no consideration, as neither is his circumstance. Yes, the one who claims to be ignorant is excused, that is if he deserves to be excused for being a new Muslim or being far away from the scholars, as we know according to what I have already presented from al-Rawdha.”
(Obviously the ruling is given out by a Qadhi not just any John Doe, as for the kufr it's clear and even a layman can pronounce takfir if he is aware of what scholars have said, WAllahu a'alam).

If he only did it the one time, is there a way to give him the benefit of the doubt? What if he was an ignoramous and didn't know how offensive what he said was? If he said he was joking when confronted, maybe he realized, repented, and won't do it again? You can repent of acts of kufr, can't you?

We asked multiple Mufti's and apparently the 70 excuses rule does not apply to someone insulting the Prophet.

Some scholars have said that repentance of such a person is to be accepted, and he be forgiven, i.e. without any hadd.

Threads like these are FAR more better and to some enlightening than some of the threads on islamica, and inshALLAH in future instead of bickering over how a person should address others, we should first correct ourselves ( as we all make inappropriate posts at times). And we should definitely encourage each other to post things that are related to Islam and discuss them as opposed to shutting others up and calling threads as such "obvious". Its important to know these things.
And one last point, There are certain members whom have different ways of dealing with others, but instead of throwing it in their faces each time, why dont you all make dua that the person changes? or PM them? if we continuously point to the faults of a person how on earth do we expect them to change.
( I totally deserve a rep)
