Most important Muslims in History
My sister is doing a research on the most important people (male or female) in Muslim history.
please post any others which you think are important that are not one of the options
preferrably people besides the prophets or the sahabah, please.

Ninjas can kill anyone they want! Ninjas cut off heads ALL the time and don't even think twice about it. These guys are so crazy and awesome that they flip out ALL the time. I heard that there was this ninja who was eating at a diner. And when some dude dropped a spoon the ninja killed the whole town. My friend Mark said that he saw a ninja totally uppercut some kid just because the kid opened a window.

That's an extremely broad topic and could be approached from religious or political perspective.
Religion wise, you would have to say the four imams of fiqh and then the six imams of hadith (the compilers of the six most important hadith books). I would also include Sufyan A-Thawari and Hasan Al Basri.

I say Malik el Shabazz el hajj, Al Ghazali, the four imams of fiqh and ibn Taymiyyah
also the rasoolullah(saws)

After the Prophet pbuh ?
I'd say Hadrat Abu Bakr ra. He ensured the security of the state and then ensured that even when other sahabi's weakened in the face of opposition he waged war against those who refused to pay Zakat.

If I were to pick 4 people, I would pick Hasan Al Basri, Abu Hanifah, Ahmad Hanbal and Al Ghazali. Hasan Al Basri preserved the inward aspects of Islam, Abu Hanifah preserved the fiqh, Imam Ahmed preserved the aqeedah of Islam, and Imam Ghazali unified all these things when they were becoming disorganized and divided.

Is there a limit to the number?
I'd defenitely mention the Khulafa rashidun, the Ummahat Al-Mumineen, some of the Women during the time of the Prophet Sallalahu alayhi wasallam, like Sumayyah the first martyr in islam and Nusayba bint Ka'ab, and some of the Sahaba radi allahu anhum.

If you are excluding Muhammad SAW and the sahaba, then you would have to look at Imam Ahmad ibn Hanbal. He stood up for the believes of Ahlul sunnah at the time of the fitnah of the mutazilla, sadly not many people now about this. His musnad also contained approx. 30,000 hadeeths. But off that list that you posted, it would have to be al-bukhari.

Khomeini, Ghazali, Malcolm X (in terms of his prominence), Naseer al-Din Tusi, Ibn Sina Ibn Rushd, Ibn al-Nafis, Abu Bakr Razi and others (jn terms of scientific accomplishments)

in islamic religious history, the most important top down is Khadija (RA), the first person to become Muslim after the Prophet(SAWS).
the mother of our ummah.
in islamic political history i would say Tarik ibn Zeeyad.
