assalamu alaykum

i cooked the biryani in a tin baking thing and covered it in foil, (instead of using a glass cooking dish with the top) added the half cooked rice WITH the water and the rice came out MUSHY

i made celery, carrot and lentil soup today. Think I'll make steak fajitas tomorrow iA.

so i ran all over the place trying to get the ingredients for the buffalo chicken pizza. i couldn't find a regular plain pizza dough ANYWHERE so i had to settle for a frozen cheese pizza. the grocery store was also out of boneless chicken so i got al safa's breaded chicken nuggets instead. i made the following and it was SOOOOO GOOOOOOOOOOOOOD... i think i'm taking a break from my diet for a little bit

Buffalo Chicken Pizza

- one celeste frozen cheese pizza
- ranch dressing
- frank's hot wing sauce ($2 at walmart)
- al safa breaded chicken nuggets (about 4 nuggets for one pizza)
- quesadilla shredded cheese (or regular pizza cheese)

bake the chicken nuggets as written on box. when done cooking them, cut them into small pieces and toss them into a bowl of the wing sauce. cover the top of the frozen celeste pizza with ranch dressing, take a spoon and spread it evenly. spread the chicken and the sauce on the pizza. cover with a little bit of the shredded cheese and bake in the oven for like 10 mins until cheese is melted and pizza is done.



.. and quick and easy!

awesome! Did you know that you can buy frozen bread dough in the freezer section of most supermarkets? It's not as fast as using a ready-made frozen pizza, but it makes EXCELLENT pizza dough!

I had something like this at pizza tempo in maryland. best pizza i have ever had. the pizza was a standard pizza (mozzarella cheese and tomato sauce) with bell pepper and onion toppings. The additional topping was pieces of chicken breast marinated in wing sauce. When the pizza was done baking, they drizzles ranch dressing on it. so. good.

Rainy days always make me crave soup for some reason. So I decided to make tomato soup. I want to try this butternut squash soup with cream cheese next.

dinner last night:

- broiled salmon, with salt/crushed red pepper/olive oil
- stir fried red potatoes. just used all sorts of herbs/salt/pepper, then added sauted mushrooms and chopped green onions towards the end.
- asparagus ..made a tangy sauce with brown sugar and stir fried them for a few minutes




a tip on cooking fish, for those of you that don't already do this...especially with salmon:

a few minutes before cooking, turn your oven on HI (broil). or 400 degrees (bake) ..either way. stick in a frying pan..one that won't melt. or you can use an oven safe dish if you don't have one.

while that's heating up, get another frying pan and add a little oil to it. once heated, place salmon filets in the frying pan and flip when you notice the bottom getting white (the pink turns white). once all sides are white, pop them into the oven safe dish/frying pan for about 5 minutes, turning once

..and voila. best tasting fish ever. it comes out really tender and juicy, unlike the dry result you get when you bake or fry it straight up.

we had spicy sweet and sour chicken for dinner, with fried rice. I used a spice packet for the sweet and sour sauce (with some tabasco sauce for the spicy bit) but this chicken was yummy. I made some pancake batter, but the chicken pieces in the batter, and then deep fried them. Without the sauce they taste just like chicken nuggets (only better becuase I used boneless skinless thighs instead of breasts, thighs are tastier)

I bought some catfish because it looked good, but I'm not sure what to do with it. Any ideas? I don't want to do nuggets or anything unhealthy like that...

I just saw this, but I did something similar. I beat an egg and added random herbs/spices to that. Then on a separate plate, I put some parm with other herbs and spices. I dipped the fish in the egg and then in the cheese mixture. I baked at 375 for 30 minutes. It turned out really well and was easy, so I'll do this again.

I made a version of this for mothers day

Almond Chicken with Yogurt Dipping Sauce

This dish is especially great because of the delicious sauce, which is so easy to make!

Serving: 6

INGREDIENTS:
1/4 cup all-purpose flour
1 cup soft bread crumbs
1/2 cup chopped almonds
2 tablespoons snipped fresh cilantro
1 ½ teaspoons curry powder
1 egg
1/2 cup milk
1 ½ pounds skinless, boneless chicken breast halves
1/4 cup cooking oil
Yogurt Dipping Sauce (recipe follows)
8-ounce carton plain yogurt
2 tablespoons snipped fresh cilantro
1 tablespoon honey

DIRECTIONS:
1. Place the flour in a shallow dish. In another shallow dish, combine bread crumbs, almonds, cilantro and curry powder; set aside. In another shallow dish beat together egg and milk; set aside.

2. Cut chicken, lengthwise, into 1-inch-wide strips. Coat strips with flour, dip in egg mixture, then coat with almond mixture.

3. Heat oil in a large skillet. Carefully add strips to hot oil. Cook over medium heat for 10 to 12 minutes or until chicken is tender and no longer pink, turning once. Drain on paper towels. Serve with Yogurt Dipping Sauce.

Yogurt Dipping Sauce:
1. Stir together yogurt, cilantro and honey; use immediately or cover and chill in the refrigerator until needed.
