yep! from scratch.. here's my recipe, it's always a hit with everyone:
chicken
2 onions, sliced
2-3 plum tomatoes, chopped/pureed (or you can use 3 tbs of tomato sauce)
1 tbsp garlic paste
1 tbsp ginger paste
1 tsp zeera (cumin)
1 tsp red chilli powder (more if you like it spicier)
1-2 tbsp dhaniya powder (coriander pwder)
salt
2 green chillies
1 cup yogurt
basmati rice
a handful of aloo bukhara
some mint leaves, chopped (pudina)
a few lemon slices
some browned onions
if you prefer the biryani 'look', some orange food color
Soak your basmati rice for 20 minutes. Also, soak the aloo bukhara so it's nice and juicy when it comes to adding them at the last stage.
Heat some oil in a pan and add onions, garlic, and ginger. Fry till golden. Add the chicken, and cook till browned. add yogurt, zeera, red chilli, and dhaniya powders. cook until the water from the yogurt has dried. add the tomatoes and green chilies, and cook until soft, and also until the chicken is cooked.
you can also cook the basmati rice at the same time. add the water, 1-2 tsp salt, and 2-3 drops of oil (so the rice can separate well), and when it boils, add the rice. it's critical that the rice is not overcooked, so keep your eye on it.
put a tiny amount of oil at the bottom of a pot. put a layer of rice on the pot.. add some of the browned onions, some of mint leaves, some of the lemon slices. add a chicken layer. repeat each process until you're finished with both the rice and chicken masala. the top most layer should be rice.. if you're using the food color (add the food color at the topmost layer). cover with a paper towel and airtight lid. keep it on low heat for 10-15 minutes. do not open the lid during this time. when it's done, mix it, and enjoy
