inshallah after Ramadan:
i want to try making Fish Tacos. i read this whole thing in the Tribune about how you can barely find any places that serve Fish Tacos in Chicago and the author wanted to start a movement for it (they were giving away blue 'fish taco' awareness bands).
oh yeah, don't try fish tacos at a restaurant--the fish is beer-battered.
allrecipes says a substitute for beer is non-alcoholic beer (duh!) or chicken broth.
also want to try Chicken Enchiladas. i've never had them. Tyler Florence was making it on Tyler's Ultimate and i was fasting and now i really want them.

And yeah, my brother told me recently about beer batter.
It seems whenever we want something, we have to make it at home ourselves 'cause it's impossible to find a halal version. Boo.  :

it was alot of work. pretty good.
too bad i was fasting when i made it..i really wanted to taste the salsa on its own.

musta been good enchiladas. personally when it comes to mexican food, i just throw stuff into a tortilla. but mole, gotta keep reminding myself, i must do that. oh yeah and ceviche.
i made a tray of oven fried chicken (i've decided making fried chicken is only feasible with a decent stovetop (mine heats oil reallly weird; i can never fry well because the temperature just doesnt stay consistent, even when i monitor with a thermometer) and oil that you will have an opportunity to re-use..which i never do) and two batches of corn bread the other day (and caesar salad, but that doesnt really count) for one of our iftars here at school. which was a change of pace at least, considering we always eat either arab or desi food. it's funny though, because no one really knew what they were eating (what? american food? what's this?!). there were *several* people who didnt even know what cornbread was <--  and im talking about those kids born and raised here.

So today I made cheese and broccili risotto. I've never had risotto before. It came in a box from Whole Foods, I just added water and milk. It was creamy when I made it, but I had to reheat it to eat it after iftar time, and it got clumpy. And the cheese sauce had a sharp flavor. I'll have to try to fresh someday. Basically it was like Italian cheesy khichree.

Taco Soup
INGREDIENTS
* 1 pound ground beef
* 1 small onion, chopped
* 1 (1 ounce) package taco seasoning mix
* 1 (15 ounce) can tomato sauce
* 1 (15 ounce) can whole kernel corn, drained
* 2 (15 ounce) cans black beans, drained
* 6 cups white corn tortilla chips
* 1 cup shredded Cheddar cheese
* 1/2 cup chopped green onion
* Sour cream
DIRECTIONS
1. In a skillet over medium heat, cook beef and onion until beef is browned; drain. Place beef mixture in slow cooker with taco seasoning, tomato sauce, corn, and beans.
2. Cover, and cook on Low 2 hours. To serve, put a handful of tortilla chips in each bowl, and top with soup, cheese, sour cream, and green onions.

so yesterday I made banana cake with peanut butter frosting, topped with chopped butterfingers. my sisters-in-law kept sneaking globs out of the frosting bowl.
oh my God.
so freaking good.
