Oooh that sounds good . I need to go out and get some rice to experiment with my rice cooker.
I posted the chicken qeema recipe in this thread before and thank God I found it because I'd hate to type that all out again It's my mom's recipe, she makes it really really well mA. I've only made it once and it turned out okay...I'm sure it was because I was missing the kewra water and green chilies.
Anyway, here it is
Quote:
1 lb minced chicken (chicken qeema)
1 level tbsp garlic paste
1 medium sized onion, chopped
6 black peppercorns
1 clove
2 cardamoms
1/2 tsp garam masala
1/4 tsp cumin powder
1/4 tsp turmeric powder
1/8 tsp cayenne pepper powder/red chili powder
1/4 tsp salt
cilantro/coriander, chopped finely
1/2 - 3/4 tsp kewra water
1 or 2 green chilies, whole
lemon juice from a slice of lemon
shaved ginger (very small amount, use your own judgment)
Defrost the meat in the microwave. While it's defrosting, fry the chopped onion on medium heat until it's medim brown (not black!). Make sure to stir it well so the onion pieces are uniformly cooked. Add the garlic paste and stir once. Immediately add the meat. Keep the heat between medium and medium-high. Cook until almost done and add the peppercorns, clove, cardamom seeds, garam masala, cumin powder, turmeric, cayenne pepper and salt. Stir together and cover for 5 - 10 minutes.
Make sure the meat is cooked by this point. Add about 1.5 cups of water, add the coriander, kewra water, whole green chili(es), shaved ginger and lemon juice. Bring to a boil, cover it, turn it down to low and simmer for 10 - 15 minutes. Check and stir once or twice. Taste test to see if it needs more salt.*
Optional: Decorate the top with shaved ginger and chopped coriander.
*Once when making regular beef qeema I taste tested it at the end and ended up adding too much salt. It turned out terribly salty and nobody but me ate it...so be careful.
