Re: The Art of Cooking
salaams,
im dying (figuretively speaking of course) to make mirchi salan. we've a bag of fresh peppers in the fridge and if i don't cook 'em soon enough. mom will make 'em pickles. :barf:
google, my phriend helped me find this...

1 stalk curry leaves
2 1/2 tbsp. oil
1/4 tsp. turmeric powder

1/2 tsp. cumin seeds
salt to taste
2 lemon sized balls tamarind, soaked in 1 cup water
1 tbsp. grated dessicated coconut
2-3 pinches asafoetida
Roast and grind to a powder:
1 tbsp. peanuts
1 tbsp. sesame seeds
1 tsp. cumin seeds
Grind to a fine paste:
1 large onion
1 large tomato
1 tsp. garlic grated
1 tsp. ginger grated
1 tsp. chironji
Method:
Deseed and remove stalk of chillies.
Put plenty of water to boil, adding a little salt.
Put chillies in boiling water, and cook till whitish in colour.
Drain, chop into large sections or keep whole.
Heat oil in a large frying pan.
Add chillies, fry for 1 minutes, remove. Keep aside.
Add cumin seeds, allow to splutter.
Add curry leaves to oil, asafoetida, ground paste, coconut.
Stir and cook for 3-4 minutes.
Add ground powder, masala powders, simmer till oil seperates.
Add salt and tamarind water, and 1 cup water.

Serve hot with sheermal, khuskha or parathas.
Making time:30 minutes
Makes: 5-6 servings
Shelflife: 2 days refrigerated

my question is: since the ingredients include stuff like tamrand and asafoetida (goor/gurr), is it gonna be a "sweet salan" , i so wanna try it, but i dont wanna be blamed for ruining everyone's taste.

Re: The Art of Cooking
assalamu alaykum
did i mention i made biryani? I can't see that i did. I followed laimun's method but not the ingrediants or spices as i cheated with a boxed one It was nice, but too spicy and i made enough to feed 10 (no exageration) not 2. The rice was perfect and the chicken was cooked (very surprised as i just sceptically put it in raw and marinated as laimuun ordered.)
Today for lunch I made noodles and marinated chicken breast on a bed of salad. For dinner I made southern fried chicken (and marinated other chicken and made plain chicken, just for choice purposes) with buttery cous cous also made some random tomaotey sauce with peppers, in case it was all dry, but it wasn't alhamdulilah.
sumiya- i need an apron. And when the husband asked if he could come into the kitchen (as I can't juggle 3 pans AND conversation and not turn into an angry girl) i said yes. Then I asked him to stir something...then after 5 minutes he asked ''can i go now?'' So yeah, next time, if i want company i won't ask him to do anything, though I'm not sure he'll be braving the kitchen again anytime soon.

Re: The Art of Cooking
So my Mr does not like fish and hates the smell of it. So my first complete meal I ever cooked for him? Yeup, it was fish lol. I double-breaded and fried Tilapia fish, which does not have the fish smell whatsoever. It actually looks like chicken cutlets and surprisingly shares a similar taste. I made a bed of rice and black beans, the rice seasoned with Goya Sazon. I made some focaccia and mom made a big ass salad [yellow peppers, swiss cheese, spinach, grape tomatoes, feta cheese, cucumbers etc.]. All in all, he ate it and liked it. Yesssssss. But all weekend he kept saying how I tried to trick him, lol.

Re: The Art of Cooking
I have a current obsession with pretty dishes. Food looks so much better when served on the right dishes and it actually increases your appetite.
Yesterday night I cooked with my mom . She made me cook so many items at once that I think I forgot most of the steps. They were typical Bengali dishes like potato curry with beef and tomatoes.
