Heat the 1/4cup of oil and sauté the onions, ginger and garlic till onions are soft and a little transparent. Add curry leaves and turn around, then the ground mixture and sauté till the fat separates.
Add the tamarind paste, salt, turmeric, red pepper and mix well, and then add the baingans. Turn around a few times.
Add about a quarter of a cup of water.
Bring to a boil and simmer and cover for about 5 minutes.
Serve hot garnished with the hara dhania.

what is kosher gelatin? Can we eat it? I like yoplait whips (they have kosher gelatin) and didn't know if it's safe to eat...

My mommy made me an aloo paratha. I love her.
She wasn't home when I woke up though, and then she came back after and was like "Did you eat the paratha I made you?"
I was like "No, I had toast for breakfast..."
'Cause I didn't even see it.

kosher gelatin, if the item is marked with a 'K' then we can't eat it, bc they allow pigs to be used in the process. We can eat items marked with a 'U' .

Well, the funny thing was my cousin was over then too. So I was like "Did she know about my aloo paratha?" And my mom said she did.
And I turned to her like "Why didn't you tell me? You just wanted it for yourself, didn't you? Selfish."
There were two left and we both ate one. Then we had chicken pallau. Yum.
You can come over though and I'll make you aloo parathas.  Mine aren't as good as my mom's of course, but they're edible.
