for a more chinease like recipe... make sure to have ginger powder, soy sauce, garlic and a few other spices of ur choice (dont noe what u like...) but when u use the ginger... dont put alot.. very little will be enough.

tonight i made salmon with white rice.. and then i tried to bake brownies out of some german chocolate cake mix i had... i put some small chocolate chips in it and nuts on the top... lol... they look like brownies but taste like cake.. still good though

i cant wait to make tilapia parmesan

but i dont think this recipe is gonna work too well. i tried something similar to make lemon pepper tilapia and the mayo got messy in the oven...so tipssssss for baking with mayo..thanks.

INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

you could get all hardcore and buy the actual vanilla beans. i found something at my halal store which is a white powder called vanillin (in a small bottle) and that works pretty well. there are also imitation vanilla extracts (but ironically, some of them still contain alcohol), though they are much weaker.

by the way, since i've stopped using vanilla extract, nobody has seemed to notice. i think most people are pretty oblivious to the actual flavors when they eat baked goods (if it's sweet, they're usually happy), so while it's definitely not the same w/o vanilla, most people will be none the wiser.

baghara bhaigaan:

Ingredients


6-8: Baingans of the small variety
1/2cup: Onions-finely chopped
˝ tsp: Garlic paste
˝ tsp: Ginger paste
1/4cup: Grated dry coconut
2 tsp: Tamarind paste or to taste
1 tbsp: Coriander seeds-roasted
2 tsp: Cumin, roasted
2 tsp: Sesame seeds, roasted
1/4tsp: Turmeric
1/2tsp: Powdered red pepper
7-8 : Curry leaves
1 tbsp: Hara dhania for garnish
1/4cup: Oil
Oil for deep frying
2 tsp: Salt or to taste

Method
Slit the baingans and deep fry over high heat, till glossy and a little tender.
Remove from oil and keep aside.
Grind the coconut and the roasted coriander, cumin and sesame seeds together, using a little water if need be.
Heat the 1/4cup of oil and sauté the onions, ginger and garlic till onions are soft and a little transparent. Add curry leaves and turn around, then the ground mixture and sauté till the fat separates.
Add the tamarind paste, salt, turmeric, red pepper and mix well, and then add the baingans. Turn around a few times.
Add about a quarter of a cup of water.
Bring to a boil and simmer and cover for about 5 minutes.
Serve hot garnished with the hara dhania.

I made baked ziti today using the recipe on the back of the pasta box. The only thing I changed was to make my own tomato sauce instead of getting the one in the jar. It came out good alhamdulillah

I've used carnation french vanilla creamer I actually prefer it over vanilla extract. I love the vanilla flavor in baked goods and Its more prominent with the creamer than the extract. You can make cream cheese frosting without the extract. Half the time i forget to put it in and I didn't even notice. If you're going to use the creamer in something that isn't going to be baked, the frosting for example, a little goes a long way.
