I'll tell you a white girl secret : you only need about 2-3 tablespoons of oil to make really tasty aloo gobi. Of course, if you want to make it REALLY white, you should use butter. Butter makes everything taste better. But, it's too expensive, and has cholesterol, so we use olive oil.
