Honestly, that doesn't sound too scientific. If you wanna ease off of sugar, then you stop eating the bad, processed kind of junk and desserts (gradually if you can't go cold turkey). Fruit is good for you. And it doesn't make sense to have sugar substitutes but no fruit, if you're trying to wean off of sugars. If you're craving something sweet, a banana or some pineapple is way better for you than anything else.
I don't think the South Beach diet is supposed to be really healthy. I've heard of people losing 20 pounds in the first two weeks on it.  That's not healthy/sustainable weight loss.

What is insulin resistance? I've always associated insulin issues with diabetes or similar problems. 
I had a major chocolate craving about 2 or 3 days ago and now I have a broken out face (from the OD on sugar) and i'll probly the see the effects in the weight dept in a few more days. I could probably benefit from a non-sugar diet. Now that i've got my allergies/cold/whateverthatwas under control, inshallah i am going to start working out again too.
We're supposed to go canoeing tomorrow. I've never been but it sounds like fun and I can hardly wait

Just to clarify, when those in the medical field and nutrionists says "sugars" they mean carbs. It's a bit more technical and regardless of what good carbs you eat, you're still spiking your insulin. I've eaten whole grains and brown rice for years now and I would still have sugar (ie, carb) cravings for things like pasta and bread. I even had to cut down on "good carbs" to get it stabilized.

I wanna try out this facial guideline. And cut out sugars. My face has been good for months now alhamdulillah and the chocolate/sugar OD really messed it up.

its so fun! i went a few weeks ago (before that i hadnt gone since i was a kid at camp when i was like 8) and i had such a good time alhamdulillah. word of advice..dress to get wet (dont wear a white shirt!) cuz at one point or another, everyone that went tipped over their boat. and we had a splashing war

Insulin resistence can lead to type II diabetes. Basically, after a period of time, because of high sugar (carb) intakes, you start to need more insulin to lower your sugars thus creating sugar spikes. Insulin resistance - Wikipedia, the free encyclopedia <--- does a better job.
I'm always been confused about insulin resistence as some articles make it sound super common and others make it seem like a more rare medical condition. I've also heard of insulin insensitivty. I don't know if they are interchangeable. Most people probably don't have it BUT I know I've noticed a difference when I cut out sugar. For example, now, if I eat the amount of sugar (here I do mean sugar, like a candy bar), I easily get neaseous and I get headaches. Although I probably did not have insulin resistence, cutting out carbs did make me more sensitive to insulin.
Insulin production promotes fat storage so the more insulin you put out, the more you trigger fat storage mechanisms.
In other words, the less sensitive you are to insulin, the less you produce as a result of sugar intake, the less fat you store. HowStuffWorks "Fat Storage and Insulin"

In terms of insulin, your body doesn't distinguish between good and bad carbs. The good and bad carbs are good and bad for other reasons that relate to nutrition.
Anyways, this isn't earth shattering and pretty much accepted by nutritionists and doctors. When you read more about it, it makes plenty of sense.
