Re: The Art of Baking
Well, that sounds kind of like trifle... if it were layered with custard and fruit.

Re: The Art of Baking
i baked an apple pie yesterday but the crust came out so tough. is it cause i used butter instead of shortening in the flour? or is it cause there was too much flour and not enough butter? and umm.. i used fat free butter. is that causing the problem?

DIRECTIONS
1. In a mixing bowl, combine the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; add to egg mixture and mix until combined. Fold in chocolate chips and 1/2 cup walnuts. Spoon two-thirds of the batter into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 12 minutes.
2. Meanwhile, in a saucepan, heat the caramels and condensed milk over low heat until caramels are melted. Pour over baked brownie layer. Sprinkle with remaining walnuts. Drop remaining batter by teaspoonfuls over caramel layer; carefully swirl brownie batter with a knife. Bake 35-40 minutes longer or until a toothpick inserted near the center comes out with moist crumbs. Cool on a wire rack.
I would've taken pics but my cameras MIA. I'll just say if I could run down a sandy beach into these brownies arms I would.

Re: The Art of Baking
i made an apple upside down cake today (think pineapple upside down cake....but with apples instead of pineapple). the official name for it is "applesauce apple upside down cake" because in addition to the apples, you throw some apple sauce into the batter.
i didn't have applesauce, but i had a lot of apples. so i made it i even poured a couple tablespoons of apple juice into my (mini) food processor while the apples were going. dudes, it was awesome in the cake. i've made this cake before with "regular" applesauce from a glass jar, but this homemade applesauce business realllly took the cake to a different level. i put one granny smith and one mcintosh apple into the food processor, and the top (bottom) of the cake was studded with slices of peeled granny smith apples cooked in butter and brown sugar. the batter was your basic sort of butter cake mixture, but with lots of cinnamon and nutmeg added in for spice.
seriously good stuff.

Re: The Art of Baking
Im in a baking mood so I made these cookies and they came out SO good
White Chocolate Macadamia Cookies Recipe
I also made Toffee bars..they came out alright.
I have leftover white chocolate and semisweet chocolate baking squares and
leftover slim fast (how ironic) french vanilla shake mix
lemon peel
hazelnut flavor coffee mate
shredded coconut
instant coffee granules
almonds
using those Im gonna make a bunch of truffles: white chocolate french vanilla, white chocolate lemon truffles, hazelnut truffles, almond truffles, macadamia truffles, mocha truffles, and coconut truffles
i wanted to make mint truffles but I couldnt find any non-alcoholic peppermint extract
so i treid making my own using mint leaves but it didnt work out

Re: The Art of Baking
yum, truffles
this doesn't have to do with baking, but you brought up the issue of chocolate. whenever my older sister travels anywhere and asks me what i want her to get me, i say chocolate. so the latest and greatest has been this box of chocolates from amsterdam- some museum she went to, so each chocolate is wrapped in a miniature picture of some famous painting. and i *just* ate the last piece. no more dutch chocolate for me.
this past sunday i made eclairs, that apple cake, and a chocolate truffle cake for an msa event.
the eclairs were (and always are) the hardest to make. normally i have fun doing it, but because i was in a rush it was pretty annoying. you have to make the batter first (it's a cooked one) and make your pastry shapes while it's still warm (so it puffs up in the oven). my first several shapes are always duds; i get good at them like halfway through. i made the pastry cream (it's pretty much a custard) ahead of time, but you have to give yourself quite a bit of time to fill the pastries; it's not easy. and then you dip them into chocolate + heavy cream. however, one thing i did that i liked was that instead of dipping them into that, i put the chocolate in a little ziploc, snipped off the tiniest bit from a corner, and made a zig-zag design on each one.
man i need a camera just so i can take pictures while i bake stuff. i know that describing all that probably made zero sense.
