so i did. and you know how cakes and brownies rise up more in the middle and the sides are lower. well, to make it the same height (i like balance and symmetry), i poured chocolate chips on the four sides right after i took the brownies out of the oven. the choc chips melted as the brownie cooled. it wasn't as much work as frosting the whole pan and you know how the sides ususally end up not as moist as the middle, well the molten choc chips compensated pretty well for that. and they looked really pretty too.

If the cream comes out thick, then pipe out less, more spacey designs
If the cream comes out thin, then pipe out more, elegant designs
Simple shapes, flower, leaves, etc...works
I do this when I feel like decorating...or else blah!

4.divide dough in half. drop each half onto ungreased cookie sheet. With lightly floured hands (the dough is sticky), shape each half into 12 inch long logs. (I just made rectangles). Bake for 30 min til firm. Remove from oven and let cool on cookie sheet for 10 minutes.
5. Cut each log into half-inch slices. Place cut side down on cookie sheet and bake 8 minutes til golden, turn slices over halfway through, and rotate sheets between upper and lower racks halfway through baking.

sooo i broke my wallet last night buying all organic ingredients for baking
the lady at the check out was like, would you like paper bags too?
cuz you know, organic ppl dont use plastic bags. GO GREEN!
i felt so cool when she asked me that
anyways
i made organic whole wheat chocolate chip cookies. i made diff batches with coconut, walnuts, peanut butter, chocolate chips..mixing and matching etc.
used mostly organic ingredients. replaced butter in a normal recipe with peanut butter and olive oil.
they taste absolutely awesome and whole. not too different from cookies made with regular flour

PREHEAT oven to 350° F. Place 36 2-inch foil bake cups on baking sheet(s) with sides. Place one vanilla wafer, flat-side down, on bottom of each cup. Place 5 to 6 morsels on top of each wafer.
BEAT cream cheese, sugar and flour in large mixer bowl until creamy. Add eggs and vanilla extract; beat well. Spoon heaping tablespoon of cream cheese mixture into each bake cup.
BAKE for 15 to 17 minutes or until just set and not browned. Remove from oven to wire rack. While still warm, top cheesecakes with remaining morsels. Morsels will soften but will retain shape. Cool completely. Cover and refrigerate.

I used the above recipe to bake mini cheesecakes. I tweaked the recipe a bit here and there. Made my own graham cracker crust and used 8 oz of cream cheese and 8 oz of ricotta cheese. Didn't bother with the extra chocolate chips as the finishing touch. The recipe indicates that you can make 3 dozens, but the filing is only enough for 2  .
Alhamdulilah, they turned out great  . Everyone liked them. I have no pictures though.
At the moment, I'm looking for a banana walnut muffin recipe. I want to bake some for breakfast tomorrow  . Or I could just make a bunch of banana pancakes  and freeze them, but making pancakes is tedious. You have to wait near the stove and flip and all that  .

you used ricotta cheese and it came out good? since i didnt use a room temp. cream cheese, my plain ones didnt come out good. but the strawberry ones were good. also they were a lil dense. i'm gonna try again next week.

Yup, since the recipe calls for 16 oz of cream cheese I used half cream cheese and half ricotta. The taste is less creamy, so it doesn't feel like you're just eating cream and sugar  . And I didn't use room temp cream cheese either. I had no idea that it makes a difference? I thought room temp cream cheese or butter is just easier to beat, that's all.
Oh and there were also no cracks, which was a pleasant surprise because my cheesecakes always get crack in the middle when cooling down!
Finally, the denseness might have to do with baking it too long. But I'm not too sure since I'm an amateur baker  .

Speaking of mini cheesecakes, I've used this recipe lots of times and it comes out great every time. I personally don't like graham cracker crusts, so I liked the vanilla wafer crust a lot better. It was much easier since I didn't have to crush the crackers, mix with butter, then press into each pan. I can just drop one wafer into each tin  When you take them out and they start to cool, the top caves in a bit forming a pocket for a filling. I used cherry once, and I used chopped (and toasted a bit) hazelnuts mixed with a chocolate ganache as toppings. Heres the recipe:
2 8 oz pkgs of cream cheese
2 eggs
1 cup sugar
1 tsp vanilla extract
12 Nilla wafers
Mix cream cheese, eggs, sugar and vanilla. Put pan liners in a muffin pan (makes a dozen) and put a Nilla wafer, flat side down, in each liner. Pour batter in (it will fill them up all the way) bake at 350 for 15-18 minutes, and as mentioned before, when you take them out of the oven, the tops will fall, leaving you a perfect little hole for your topping.
Heres a batch I made a while back.
