So I was inspired by Asvi and made some brownie cookies, they came out great. I added one egg, 1/3 cup oil, 2 tabspn butter to the brownie mix powder, bake for 10 min at 350. I added walnuts to half the batter and mini chocolate chips to the others. Mine got crispy when they cooled completely though, I want ones that remain chewy next time. If I use the brownie mix instructions they'll probably be thin and crispier since you add water. Next time i'll use butter instead of any oil. Asvi I like the texture of your cookies better, they look softer. Did you add any water to the mixture?

I made the brownies cookies too!.... but i used this recipe. The only thing i Did differently in the recipie was use butter instead of shortening ( shortening eww!) I used 1/2 cup of white sugar and 1cup white sugare ( the combination really makes the difference) and used 1 1/2 cup of chocolate chips.

The result was a perfect chewy, moist,soft cookie! i brought them to a party and everybody ate them up. ( farah were gonna use it in our bakery)

haha i made them too. i used the recipe that asvi posted. one egg and one stick of butter to the brownie mix. i added some chopped up coconut flakes to some of them. everyone liked them, but i prefer brownies as brownies. im not a cookie fan in general though.

you know, me too, and i've never been able to fully rationalize it. i think it's because i see cookies less as dessert and more as a snack. not that they're any less rich than many desserts, but their nature lends them to being more informal than other things.

I made Stuffed Apples. Tasted pretty good. I used a packet of Maple and Brown Sugar oatmeal mix packet, so I didn't add brown sugar, but added 1/4 cup white sugar. It came out a bit too sweet, I don't think you need to add any sugar if you're using that oatmeal mix. I would recommend using unflavored oatmeal and adding brown sugar though. I added walnuts and raisins, tasted yummy.


Edit: also next time I'll cut the amount of butter in half.

Super Stuffed Baked Apples a la Mode
Recipe courtesy Rachael Ray

4 large McIntosh or Empire apples, cored
1 tablespoon lemon juice
3/4 cup brown sugar
1/4 cup instant oatmeal mix or rolled oats
1/4 teaspoon nutmeg, a healthy grating
1 teaspoon ground cinnamon
4 tablespoons butter, cut into pieces
2 ounces, 1/8 cup, golden raisins, chopped
1/4 cup chopped walnuts or walnut pieces or pecans
1 pint Dulce de Leche (caramel) ice cream or caramel swirl ice cream
Whipped cream, in a canister

Preheat oven to 425 degrees F.

Sprinkle cored apples with lemon juice. Mix next 7 ingredients and over-stuff apples. Bake 20 minutes in a small oven safe dish. Transfer apples to small bowls with a spoon and top with ice cream and whipped cream.

no i didnt melt it, but i 'softened' it by keeping the wrapper on and microwaving it for 15 seconds. i had to mix it for a while, but eventually all the dry part mixed in well. yeah, they stayed chewy after cooling. but i think if i ever make them again i'd flatten out the dough balls a little before baking so that theyd cook more evenly throughout.

Yum-O !! i want some...
i feel special ... i didnt add water..but i did pick a chewy brownie mix. and i must also admit, i like brownies instead of brownie cookie. o and also.. since i didnt have stick butter.. i used the spreadable one.

I just experimented with cake mix cookies as well this past weekend. I used 2 eggs, 1 stick of butter (softened in the microwave), and I added in some crushed nuts. I mixed the dough with a wooden spoon until it looked homogenized. They came out nice and soft and after three days were still chewy. Maybe the butter and extra egg made the difference?

Today I made Biscotti with Almonds and Chocolate Chips, it tasted just like the Nonni brand ones. Peeling the almonds is a pain but otherwise it's pretty easy to make. I halved the below recipe and it made 18 cookies. I left out the almond extract and just increased the vanilla, and added 1 teaspoon of orange zest. (tangerine actually). I would definitely make this again. Next time I'll try a chocolate biscotti recipe. I could also melt some chocolate chips and dip the bottoms in it.





3 and 3/4 cup all purpose flour
2 teas baking powder
1/2 teas salt
3 large eggs
1 cup sugar
3/4 cup vegetable oil
2 teas vanilla extract
1/4 teas almond extract
1 teas grated orange peel
1 cup blanched almonds, coarsely chopped and toasted til golden
1 cup mini choc chips

1. in bowl, whisk flour, bak powder, salt.
2. in another large bowl, with a mixer at medium speed, mix egg and sugar til a light lemon color. Add oil, extracts, orange peel and blend.
3. spoon in flour mixture, almonds, and choc chips.
4.divide dough in half. drop each half onto ungreased cookie sheet. With lightly floured hands (the dough is sticky), shape each half into 12 inch long logs. (I just made rectangles). Bake for 30 min til firm. Remove from oven and let cool on cookie sheet for 10 minutes.
5. Cut each log into half-inch slices. Place cut side down on cookie sheet and bake 8 minutes til golden, turn slices over halfway through, and rotate sheets between upper and lower racks halfway through baking.
