The easiest to drive manual transmissions I've driven have been on Hondas, I think. The clutch on any nice, newer Honda is ridiculously light. That + the high revving engines make them pretty fun to drive.
I've heard Porsches are great, too..

agreed, hondas are really easy to drive....the first manual car i drove was a honda civic, the second was a mitsubishi eclipse, which was also easy, though i didnt like the shifter as much
