oh! something i learned recently, or rather, started incorporating recently: if you bake often, you need an oven thermometer. they're fairly cheap- get the stand up dial kinds that can hang out on a rack and they're only about $5. most ovens are hotter or colder than the temperature you set them at. also, just because your oven *says* it's fully pre-heated, doesn't mean it is.

i got an oven thermometer (finally) and i've been amazed at how wrong our home oven can be. i can only imagine what terrible things i'm going to find out about my oven at school!
