i'll eat seafood in pretty much any state. i made a shrimp ceviche (raw shrimp "cooked" in lemon and lime juice) just the other day; delicious.

You should be very careful with raw seafood. Lots of nasty bugs floating around. I know of one prominent surgeon who died a few days after an oyster dinner of liver failure from Hepatitis A (common with raw oysters).
