i made an apple upside down cake today (think pineapple upside down cake....but with apples instead of pineapple). the official name for it is "applesauce apple upside down cake" because in addition to the apples, you throw some apple sauce into the batter.

i didn't have applesauce, but i had a lot of apples. so i made it i even poured a couple tablespoons of apple juice into my (mini) food processor while the apples were going. dudes, it was awesome in the cake. i've made this cake before with "regular" applesauce from a glass jar, but this homemade applesauce business realllly took the cake to a different level. i put one granny smith and one mcintosh apple into the food processor, and the top (bottom) of the cake was studded with slices of peeled granny smith apples cooked in butter and brown sugar. the batter was your basic sort of butter cake mixture, but with lots of cinnamon and nutmeg added in for spice.

seriously good stuff.
