Jab and Strong punches are stronger than Fierce, and will typically interrupt you mid-Fierce. Although Jab and Strong are weaker, they're often better to use in this situation. The exception is when you are throwing projectiles, such as a Hadoken, because the stronger the punch will result in a faster moving projectile. The same can be said for body attacks, such as the Psycho Crusher or the Hurricane Kick; the stronger punch/kick will result in further distance.
