I hate it when cheesecake makers put gelatin in their cheesecakes (I'm looking at you, Sara Lee). Most homemade recipes never call for it. I think it has to do with stabilizing it. I'm a dork and I watch desi cooking shows on satellite and for some reason, almost every recipe of theirs contains gelatin (but they're quick to announce that "it's halal.") At least Philly cream cheese recipes don't call for gelatin.

Anyways, I guess there are still some options left for those of us who love Cheesecake Factory cheesecakes.
